Our company's Goshonogura (Mother: Hitoshi Kato) won the Gold Award at the "National New Sake Appraisal" held in May 2024. Kato Chief Brewer achieved the historic feat of winning the Gold Award for 20 consecutive years as an independent brewer and chief brewer. Even within the National New Sake Appraisal Association, which boasts a history of 112 years, this is an impressive record that is unrivaled.
Unique manufacturing method inspired by Heian period techniques
This commemorative sake is a ``saishikomi sake'' created by master brewer Kato, who has put in the best techniques through trial and error. This brewing method is a traditional brewing method that is also recorded in the ancient Heian period document ``Engishiki.'' Instead of brewing water, ``Yamada Nishiki,'' considered the highest quality sake rice, is used to polish the rice to a polishing rate of 35%. We use polished Junmai Daiginjo.
Furthermore, this sake was re-brewed for 6 years and tasted repeatedly, and then aged for 3 years. It is characterized by a multi-layered, deep aroma and a profound yet transparent taste, and is a masterpiece that the master brewer himself describes as ``secret and rare.''
Create an exquisite experience with special packaging and accessories
As befits a luxurious commemorative sake, it will be delivered in a luxurious package using a special wooden box. Additionally, a booklet is included that introduces Gosho Nogura and the chief brewer, Kato, and explains the appeal of Saishikomi Sake. This booklet also includes a special contribution by Naoko Igawa, a well-known author from Akita Prefecture. In addition, each bottle is engraved with a serial number (numbers cannot be specified), creating a special feeling that enhances the joy of owning it.
