In 2025, Dassai will be brewed in space!
It has also been decided to sell the sake “Dassai MOON – Space Brewing” which will return to Earth.
Asahi Sake Brewery Co., Ltd. (Headquarters: Iwakuni City, Yamaguchi Prefecture, Representative Director: Kazuhiro Sakurai) announced that it will be the first company in history to brew sake in outer space. This challenge are scheduled to begin in the second half of 2025
Background: Aiming for sake brewing in the era of lunar migration
As lunar migration in the 2040s becomes a reality, we believe that alcohol will become an important cultural presence that enriches people's lives. As a first step toward brewing sake on the moon, we will conduct brewing tests on Kibo using rice, which is lighter and easier to transport than grapes.
Onboard Kibo, fermentation will be carried out in an environment that simulates the gravity of the moon's surface (approximately 1/6 that of Earth), and we will take on the world's first attempt to confirm the parallel multiple fermentation phenomenon unique to sake brewing.
Space brewing project progress status
This project is being carried out in cooperation with Mitsubishi Heavy Industries, Ltd. and Aichi Prefecture (Aichi Industrial Science and Technology Center). The use of Kibo was approved in July 2024 under the JAXA (Japan Aerospace Exploration Agency) paid usage system, and the development of the brewing equipment is currently underway. Preparations are underway with the goal of launching in the second half of 2025.
About sake brewed in space
Approximately 520g of moromi fermented in the Japanese Experiment Module "Kibo" will be brought back to Earth in a frozen state and completed as "Dassai MOON - Space Brewing", a Junmai Daiginjo sake with a 50% polishing ratio. This special piece is scheduled to be sold at a suggested retail price of 100 million yen. All proceeds will be donated to Japan's space development project.

A brewing equipment set with sake rice (Yamada Nishiki), koji, and yeast was brought into space, and astronauts started fermentation by mixing the raw materials and brewing water. Stirring and alcohol concentration monitoring are automatic.
We plan to confirm the parallel multiple fermentation phenomenon unique to sake brewing in space for the first time in the world .
