Good news for chocolate lovers this fall. A new landmark has been born in Kitano-cho, Kobe City. "ametista" opened in September 2023 as a store specializing in bean-to-bar chocolate made from Asian cacao beans
What is “Bean to Bar”?

``Bean to Bar'' is a manufacturing method in which everything from the selection of cacao beans to the completion of the chocolate bar is done in-house. This method brings out the unique flavor and personality of cacao to the fullest, allowing you to enjoy a deep flavor not found in regular chocolate. At ametista, we use carefully selected cacao beans from all over Asia and ferment them locally to create a unique aroma and taste that evokes the unique climate of each region.
Main product is 70% dark chocolate bar

Currently, our store focuses on 70% dark chocolate bars. This chocolate is made using single-origin cocoa beans and without any additives. For the sweetness, we use only natural cane sugar from Amami Oshima, ``Sutoito''. This allows you to fully enjoy the original flavor of cacao.

At our workshop in Kitano Town, we carefully carry out a series of processes by hand, including cacao bean selection, roasting, grinding, tempering, molding, and wrapping.
