This burger is a dish that takes advantage of the fine flesh and sweetness of Shogoin daikon radish, and is finished with a stimulating sauce of fresh shichimi.
Shogoin radish is a winter Kyoto vegetable characterized by its beautiful white skin, dense flesh, and slight sweetness. This radish is heated in a high-temperature steam oven to bring out its sweetness. On top of that, we sprinkled fresh shichimi sauce to create a burger with a tangy sensation and a moist texture.
